Potato and Green Bean Salad with Bacon Dressing


  • 1kg Ilam Hardy potatoes,
    well scrubbed and cut into 3cm pieces
  • 200g green beans, stalk ends cut off, beans halved
  • 150g feta, crumbled
  • 2 spring onions, thinly sliced
  • 1 bought chargrilled red capsicum, thinly sliced
  • 4 tablespoons extra virgin olive oil
  • 4 rashers rindless bacon diced 2cm
  • 4 tablespoons red wine vinegar


Boil the potatoes in plenty of well salted water until almost tender. Add the beans and boil another 3-4 minutes until the potatoes are tender and the beans cooked but crisp. Drain and place in a large salad bowl. Add the feta, spring onions and capsicum. Meanwhile heat a frying pan over moderate heat and add the bacon. Fry until crisp then quickly stir in the vinegar. Pour this mixture over the salad. Season with salt and freshly ground black pepper, toss gently and serve warm.

Serves 4-6.
